Method

 

  • Preheat oven to 220˚C.
  • Melt butter in a pan.
  • Cook onions, covered, for 20 minutes, or until caramelised.
  • Add sugar and vinegar. Cook, stirring, for a further 5 minutes.
  • Season and set aside.
  • Toss baby marrows in olive oil to coat.
  • Score a 2cm border around each pastry square. Place pastry on a greased baking tray. Top with blue cheese and vegetables, sprinkle with thyme and season.
  • Brush pastry edges with milk.
  • Bake for 15-20 minutes, or until cooked through.
  • Top with rocket.
