Method
  • Finely slice the oranges (1-2mm thick), discarding seeds.
  • Simmer orange slices in water for 30 minutes until peel becomes slightly translucent.
  • Add sugar, cardamom and ginger and stir over low heat until sugar crystals dissolve, then boil for 20 minutes or until syrup has thickened.
  • Spoon into sterilised jars and seal.
