Method

Cake

  • Preheat the oven to 180°C
  • Grease and line a loaf tin
  • Beat the sugar and oil for 3-4 minutes, then add eggs and beat for one more minute
  • Sift the dry ingredients and add to the sugar mix
  • Mix in the remaining ingredients
  • Pour the mix into baking tin and bake for 50-60 minutes or until a skewer comes out clean
  • Cool in the tin


Icing

  • Mix the cream cheese, lemon juice, zest and vanilla essence
  • Add the icing sugar gradually and mix to form smooth icing
  • Spread over the cooled cake and scatter over extra zest
