Method
  • Heat a glug of olive oil in a large saucepan and fry bacon until crispy. Remove and drain on kitchen towel.
  • Set aside and keep warm.
  • Add leeks to saucepan and cook until softened. Add garlic and cook for another minute.
  • Toss in cauliflower and add stock. Cook until cauliflower is quite soft.
  • Purée mixture with a stick blender, until smooth. Stir through parmesan.
  • Season well and serve topped with crispy bacon and a drizzle of olive oil.
