Method
  • Preheat oven to 200°C
  • Cook rice in plenty of salted water for 5-6 minutes, then drain and set aside.
  • Peel and dice parsnips then cook until just tender
  • Heat a glug of oil in a pan and fry the onions until well browned and starting to crisp.
  • Remove one third of onions and set aside for serving
  • Add garlic, ginger and chilli and fry for a further minute
  • Toss in remaining ingredients plus two thirds of the coriander
  • Season and mix thoroughly
  • Spoon rice, vegetable mix and cauliflower florets into an ovenproof dish in four alternating layers.
  • Cover with foil and bake for 15-20 minutes
  • Fluff biryani with a fork. Garnish with fried onions and remaining coriander.
