This is a cheat’s version of the traditional favourite – we used ready-made pâtÃⒸ instead of the usual homemade mushroom duxelle (finely chopped mushroom mix).

Method
  • Preheat oven to 220°C
  • Rub beef fillets with oil, and season
  • Heat oil in a non-stick pan and sear fillets for about a minute on each side, then set aside
  • Cut puff pastry into 4 equal 16cm x 16cm squares. Do not roll out flat.
  • Stand each fillet on the centre of a piece of pastry and spread pâté around the sides. Brush edges of the pastry with egg, gather corners together and twist gently to create a closed parcel.
  • Brush with egg and place on an oiled baking sheet. Cook for about 15 minutes or until the pastry is cooked through.

Hints

  • If making individual portions is too intricate, simply use a whole fillet and increase cooking time accordingly
  • Puff pastry should be kept cold. If necessary, chill the parcels before baking
