Method
  • Heat the grill
  • Prick the potatoes with a fork, cover with paper towel and microwave for 7 minutes until soft
  • Cut a cross in the top of each spud and squeeze to open up
  • Mix cheese, ham, spring onions and egg yolks
  • Whip egg whites to stiff peaks and fold into the cheesy mix
  • Top each potato with filling and grill for a 3-4 minutes until puffed and golden
  • Serve with salad
