Cheesy veggie and pasta bake

Everyone's favourite, with a nutritional twist, some hidden vegetables and lots of calcium!

Method
  • Preheat oven to 180˚C
  • Cook pasta to instructions on packet. Drain, set aside.
  • Melt butter in a saucepan, add flour, stir until thickened.
  • Add cream, milk and nutmeg, stirring over a low heat until mixture thickens. Toss in cheese and stir well.
  • Cook cauliflower in boiling water until tender, drain and mash with a fork. Stir into cheese sauce. Season.
  • Toss pasta, peas and sauce together and spoon into an ovenproof dish
  • Scatter with extra cheese and baby tomatoes. Bake for 20-25 minutes or until cheese is melted and golden

 

Cook's tips

  • Use puréed spinach or butternut in place of cauliflower
