Method
  • Preheat oven to 110ºC
  • Grease a large baking tray and line with baking paper
  • Separate eggs, set aside yolks and tip whites into a large, clean, dry bowl.
  • Using an electric whisk, beat egg whites into fluffy white peaks
  • Add sugar in four batches, beating well (for about 45 seconds) after each addition.
  • Add rose water, beat for a few more seconds, then swirl through food colouring with a spoon to create a marbled effect.
  • Spoon dollops of meringue onto baking tray and bake for 40-50 minutes.
  • Remove from oven and allow meringues to cool before removing from the baking tray.
  • Store meringues in an airtight container

More good ideas

  • Replace rose water with vanilla essence
  • For drier, crisper meringues, bake for 20-30 minutes longer
  • Stir 1/2 cup desiccated coconut through the stiffly beaten meringue mixture for chewy macaroon-like meringues.
