Method

  • Soak the skewers in water for an hour, so that they don’t burn when cooking.
  • Cut the thighs in half
  • Thread the chicken pieces,  alternating with the apricots, onto the skewers. 
  • Mix the white wine vinegar, olive oil, sugar, Robertsons cumin, coriander, hot peach chutney and curry powder together. Marinate the sosaties for at least an hour, but preferably overnight.
  • Braai over medium coals, basting with any left over marinade until done.


More ideas

  • Replace  the apricots with wedges of fresh pineapple. Marinate the sosaties in ¼ cup of plum sauce, ½ teaspoon of Robertsons ginger and a pinch of Robertsons crushed chillies.
