Chicken and oregano buttered beans

Beans are a great source of fibre and they have a low Glycemic Index. Make sure you always have a few cans or packets in your store cupboard.

Method
  • Simmer beans in plenty of water for 45-60 minutes or until soft. Drain and set aside.
  • Rub chicken with oil and season
  • Heat a non-stick pan and cook chicken on both sides until golden and cooked through (4-5 minutes on each side)
  • Add butter, garlic, lemon juice and peel and oregano to pan and cook for 1 minute. Add beans and cook for a further 2-3 minutes until beans are
    warm and butter is golden brown.
  • Slice chicken and serve over beans with rocket and sliced tomatoes

Hints

  • Do not salt the beans until they have softened
  • Replace dried beans with 3 x 400g cans drained white beans
  • Boost the flavour by adding chopped smoky bacon to the beans
  • Replace the chicken with poached eggs
