Method
  • Season chicken. Heat 2 Tbsp oil in a saucepan and brown chicken. Remove and set aside.
  • Fry onion until soft, then add the curry powder and fry for a minute.
  • Add the garlic and ginger paste and fry for a further minute.
  • Add chopped tomatoes and crumble in the stock cube. Simmer for about 5 minutes, then blend until smooth, with a hand blender.
  • Stir in chicken and yoghurt and simmer until chicken is cooked through, about 10 – 15 minutes.
  • Serve with your choice of accompaniments

To serve:

  • Mrs Balls chutney
  • Yellow rice with raisins
  • Fresh coriander
  • Chopped fresh tomato & onion
  • Toasted coconut
