Method
  • Season chicken livers.
  • Heat a pan on a high heat and fry livers until well browned but still medium-rare in the centre.
  • Deglaze pan with brandy. 
  • Tip livers into a food processor.
  • Add a glug of oil to pan and sauté onion, garlic and thyme. Add to livers.
  • Blitz mixture until smooth. 
  • Add butter and process until combined.
  • Mix through cream, adjust seasoning and spoon mixture into small serving bowls.
  • Refrigerate to set.

Jam

  • Purée dates until smooth.
  • Caramelise onions in a little oil. 
  • Add remaining ingredients and date purée and cook
  • until mixture forms a jammy consistency. Allow to cool.
  • Dollop over pâté and serve with crusty bread or crackers.
