Method
  • Cook pasta according to packet instructions.
  • Drain, reserving 1 cup (250ml) of cooking liquid.
  • Season meat and toss in flour.
  • Heat a pan over a high heat.
  • Add a glug of oil and cook chicken fillets.
  • Remove and set aside.
  • Heat a little more oil and cook pancetta, garlic and shallots for 3-4 minutes. 
  • Add sultanas and sherry and reduce slightly.
  • Return chicken to pan and cook for a minute.
  • Toss in pasta, adding a little reserved liquid.
  • Serve scattered with pine nuts, parsley and parmesan.
