Chicken tagine with grapes and mint

The word tagine comes from the Moroccan earthenware dish in which the dish is traditionally cooked.

Method
  • Season chicken with salt and pepper. Heat oil in a large saucepan and brown chicken. Remove and set aside.
  • Add another glug of oil and fry cumin seeds, cinnamon, chilli and onion to soften. Add garlic and fry for 1 minute.
  • Add lemon juice and peel, ginger, sugar, orange juice and water
  • Place chicken in an ovenproof dish, pour over sauce, cover and bake in a preheated oven at 180°C for 35-40 minutes or until cooked through.
  • Stir through herbs and grapes and serve with couscous
