Method
  • Season the chicken pieces with sea salt and freshly milled black pepper. 
  • In a saucepan melt the butter, add the chicken pieces and cook till golden brown. Place on a plate.
  • Add the onion to the butter in the pan and cook it until softened. 
  • Return the chicken pieces, sprinkle over the tarragon.
  • Add the wine, put a lid on the pan and cook gently for about 30 minutes or until the chicken is cooked through. 
  • Remove the chicken, take off the skin and shred it. 
  • Let the sauce boil gently to reduce slightly. Whisk in the butter and flour paste and the sauce will thicken.
  • Turn down the heat and add the chicken, the grapes and stir in the cream. Once heated through, taste for seasoning and dish into the phyllo cups.
