This quick-cooking healthy curry is ideal for last-minute suppers. It has a wonderful fibre content from the chickpeas.

Method
  • Purée onion using a stick blender. Heat a glug of oil in a saucepan and fry onion and paste until beginning to brown.
  • Add chilli and spices and cook for a few minutes more
  • Add tomatoes, sugar and  lime juice. Season, cover and simmer for 10 minutes.
  • Add chickpeas and baby marrows (add a little more water if necessary), and cook until baby marrows are tender
  • Serve drizzled with chutney and yoghurt, with naan breads or roti
