Chickpea and chicken salad with hot Tunisian dressing & pita triangles

This delicious salad has a fabulous fibre content from the chickpeas and a serving will provide at least 2 servings of vegetables.

Method
  • Place chicken, stock, salad onions and baby marrows onto a baking tray
  • Coat with cooking spray and water. Grill for 10 -15 minutes on second rung from top of oven.
  • Shake tray every 5 minutes to evenly cook chicken and vegetables. Mix dressing ingredients together.
  • Slice each pita pocket in two
  • Cut each circle into 4 triangles and toast until golden
  • While still hot, toss chicken, vegetables, chickpeas and dressing together
  • Serve with crispy pita bread triangles


Great idea

  • Use leftover shredded chicken or ready made rotisserie chicken instead of chicken breasts
