Chickpea, brinjal and peanut Thai curry

A healthy dish with so much taste and a great fibre content! Use a low fat coconut milk to lower the fat content, and you can add a few cups of stock to turn this dish into a soup.

Method
  • Heat oil in a pan and fry onion and brinjal until soft and slightly caramelised
  • Add garlic, ginger and curry paste and fry for another minute.
  • Pour in coconut milk, add chickpeas and simmer for 5 minutes.
  • Spoon curry over rice, sprinkle with plenty of peanuts and fresh coriander and serve with lime wedges.

  • Boost your daily nutrient intake by adding more vegetables to this dish
  • Cut fat by using reduced-fat coconut milk
