Chickpea burgers with yoghurt and mint sauce

A delicious and far healthier alternative to meat burgers. The chickpeas have a great fibre content, as well as being a good source of a few important vitamins and minerals.

Method
  • Toss chickpeas, cumin, carrot, onion, parsley and egg into a food processor or bowl and season.
  • Pulse-blend or mash with a potato masher until roughly chopped
  • Add breadcrumbs and pulse or mash until combined.
  • Shape mixture into five patties and refrigerate for about 15 minutes.
  • Heat a little oil in a non-stick pan, dust patties with flour and fry for about 3 minutes on each side or until golden.
  • Place patties on kitchen paper to drain off excess oil
  • Place one patty inside each bread roll and top with lettuce, tomato and sliced onion.
  • Mix yoghurt, mint and garlic together and serve alongside burgers
