Method
  • Heat oil in a pan and cook curry leaves and whole spices until they
  • begin to splutter.
  • Add onion, garlic and curry powder and sauté until soft.
  • Add tomato paste, coconut milk, chickpeas and butternut and simmer until tender.
  • Add kale, cover and cook until tender.
  • Season well.
  • Stir through half the coriander.
  • Serve sprinkled with remaining coriander and coconut chunks, if using.

Good ideas

  • Cut the fat by using reduced-fat coconut milk.
  • Use Swiss chard if you can't find kale.
