Chilled pea and mint soup

Great as a starter or served in shooter glasses as canapés. The peas are a great source of fibre. To lower the fat content use a low-fat plain yoghurt.

Method
  • Heat oil in a large pot and sauté spring onions and garlic until soft.
  • Add peas and mint and stir for a couple of minutes.
  • Add stock and simmer for 10 -15 minutes.
  • Remove from heat.
  • Add yoghurt and blitz until smooth.
  • Season, top with crumbled feta and serve with toast fingers.

 

More good ideas

  • Add a pinch of PnP dried chilli flakes when frying onions.
  • Serve with smoked salmon or peppered mackerel on toast.
  • Reduce fat by using PnP low-fat yoghurt instead.
