Method
  • Cook rice according to packet instructions and set aside.
  • Mix lime juice, apricot jam and chilli together and rub onto salmon fillets.
  • Heat 1 tsp (5ml) oil in a non-stick pan and sear salmon to your liking.
  • Blanch broccoli, drain and set aside.
  • Whisk reserved oil, musturd, lemon juice and sugar together and season with pepper.
  • Toss almonds, rice, broccoli, dressing and basil togeher and serve with seared fish.
