Method
  • Cook the pasta according to packet instructions, drain and set aside
  • Heat oil in large pan. Fry onion and bacon until onion softens and bacon crisps. Add garlic and chilli and fry for another minute.
  • Add cherry and chopped tomatoes and cook, stirring constantly, until tomatoes begin to burst
  • Stir through parsley, season to taste and toss with cooked penne
  • Serve pasta topped with rocket, grated parmesan and olive oil


Pasta party tips

  • Serve cold meats, olives, artichokes and crusty bread on a platter as a starter
  • Make a big pot of neapoletana (tomato) sauce and let guests add olives, capers, feta and pesto, etc
