Method
  • Heat oil in a large heavy-based pot
  • Sauté onion and garlic until softened
  • Add chillies, tomatoes, beans and stock and simmer for 15–20 minutes.
  • Add chorizo. Cook for another minute to heat through.
  • Season, stir in parsley and serve with taco shells, mashed potato and crusty bread.
