Potatoes are a good source of vitamin C and along with the beans this meal provides a fabulous fibre content. The avocado in the salsa provides a great source of healthy fat too.

Method
  • Preheat oven to 200°C
  • Rub potatoes with olive oil and bake for 30-35 minutes or until tender
  • Heat a glug of oil in a pan and sauté onion until soft
  • Add garlic and fry for a further minute. Set aside.
  • Add mince and cook to combine with remaining ingredients
  • Season and simmer for 20-25 minutes
  • Toss salsa ingredients together and season
  • Top potatoes with chilli con carne and salsa
