Chilli con carne with tacos

A deliciously flavorful chilli con carne recipe with a twist. The kidney beans boost this recipe's fibre and vitamin B content.

Method
  • In a small bowl mix all the chilli paste ingredients together until it forms a soft paste
  • Set aside
  • Heat the oil in a pot over low heat. Add the mince and allow to cook till slightly brown.  Add the onion, garlic and chilli and simmer over a low heat until the onions are soft and transparent.
  • Add the chilli paste and 100ml (6T) water and allow to simmer for a further 10 minutes over a low heat
  • Add the tomatoes, lime juice, sugar, salt and pepper and the rest of the water. Cook over a medium heat for 20 minutes
  • Stir in the kidney beans and simmer until the beans are warmed through. Season to taste.
  • Depending on the acidity of the tomatoes and lime juice you may need a little more sugar to bring the chilli to balance. You can also add a little more chilli powder if so desired.
  • Heat the tacos in the oven according to the packet instructions
  • Spoon the chilli con carne into the taco shells and top with the grated cheddar cheese and sliced red onion


Variation:

  • This delicious Mexican beef stew can also be served with cornbread, tortilla chips and rice.
