Method
  • Heat sugar, water and syrup in a saucepan until sugar has dissolved.
  • Increase heat and boil for 10 -12 minutes until deep amber in colour.
  • Swirl through nuts and salt.
  • Pour brittle onto a greased baking tray lined with greaseproof paper and allow to cool and set.
  • Chop brittle into small pieces and set aside. Ice cream:
  • Heat half the cream in a saucepan to just below boiling point. Remove from heat and add chocolate and cocoa powder.
  • Stir until smooth.
  • Add condensed milk and vanilla and mix well. Allow to cool slightly.
  • Whip remaining cream to soft peak stage.
  • Fold cream and brittle through chocolate mixture.
  • Pour into a plastic container, freeze overnight and serve.
