Method
  • Pre-heat the oven to 160ºC
  • Grease a large baking tray
  • Mix the flour, bicarbonate of soda and salt together.
  • Beat the butter, brown sugar, granulated sugar and anilla with a mixer on medium speed until blended
  • Stir the flour mixture into the butter mixture and beat until blended. Stir in the chocolate chips and nuts (if using)
  • The dough will be dry and crumbly; pinch it into lumps the size of a tablespoon
  • Place the cookies on the greased baking tray and bake the cookies for 18 – 20 minutes until they are an even golden brown. If you are using 2 pans in 1 oven switch places after 10 minutes.
  • Let the cookies cool on the pan for about 3 minutes, then transfer to racks with a spatula
  • Serve warm or cool. Store in an airtight  container for up to 2 days or freeze for longer storage
