  • Makes 16 small sticks

 

  • Mix bruised garlic with oil and set aside to infuse.
  • Thread chorizo, haloumi, baby marrows and peppers onto skewers in alternating layers.
  • Heat a griddle pan until smoking hot.
  • Brush kebabs with garlic oil and sear for 2 – 3 minutes per side, or until well charred.
