Method
  • Preheat oven to 180°C. 
  • Season chicken cavity and stuff with onion.

 

Butter basting:

  • Mix all basting ingredients together. 
  • Loosen chicken skin over breast and stuff with a little basting. 
  • Rub remaining basting over chicken and season.
  • Cover with foil and roast for 60 minutes.
  • Uncover and roast for a further 30 minutes, basting with juices occasionally. 
  • Remove chicken and set aside to rest.

 

Gravy:

  • Remove excess fat from pan juices. 
  • Add sherry, sugar, juice and raisins.
  • Cook over medium heat, scraping pan with a wooden spoon to loosen any burnt bits, until slightly reduced.
  • Serve chicken with gravy.
