October is the time to get your Christmas pud ready so it's perfectly mature for Christmas.

Method
  • Place fruit mix, water, spices and butter in a saucepan and bring to the boil. 
  • Remove from heat and stir in bicarbonate of soda.
  • Add brandy, sherry or orange juice, cover and set aside to cool.
  • Cream eggs and sugar together and add to cooled fruit mixture.
  • Fold in grated apple, flour and salt and mix until well combined.
  • Pour mixture into a large (3L) greased heatproof bowl (or two smaller 1.5L bowls).
  • Place a folded tea towel into a roasting pan and place bowl on top. 
  • Fill roasting pan halfway with water, then cover pudding and pan tightly with foil.
  • Bake at 180ºC for 1½-2 hours or until cooked through.
  • Cool pudding thoroughly in bowl, wrap tighly in clingfilm and store in a cool, dry place for up to 6 months.
  • Heat in a 150ºC oven for 30 minutes before turning out.
  • Serve with custard, cream or brandy butter.
