Method
  • Heat olive oil in a large pot
  • Cook onion and garlic paste for 2-3 minutes
  • Add vegetables and stir to coat
  • Pour in tomatoes and stock, bring to the boil and simmer for 20-30 minutes over a medium heat
  • Stir in spinach and beans five minutes before the end of cooking time
  • Season to taste, sprinkle in parsley and serve with seeded bread spread with fat-free, smooth cottage cheese
