Method
  • Heat oil in a medium saucepan
  • Add onion and garlic and fry for a few minutes to soften
  • Add remaining ingredients and bring to the boil
  • Reduce heat, cover and simmer for 20 minutes
  • Remove lid, season and simmer for a further 10 minutes to reduce and thicken
  • Toss sauce with pasta and serve with rocket

Good ideas

  • If short of time, buy 2 packets PnP ready cut mixed vegetables or frozen mixed vegetables
  • Use the ratatouille filling in baked potatoes
  • Serve scattered with a little reduced-fat feta cheese
  • Add a little finely chopped fresh chilli
