Method
  • Preheat oven to 180ºC
  • Place the paste ingredients into  a blender with a glug of oil and blitz until smooth
  • Place pork in a plastic bag and pour over paste. Allow to marinate for 2-3 hours or overnight. 
  • Place pork and any leftover paste into a roasting pan and pour over cider  
  • Cover and cook for 1½ -2 hours or until fork tender. Add more liquid to pan if necessary. 
  • Uncover pork and add apples to pan.  
  • Cook for a further 25 minutes or until apples are tender
