Method
  • Preheat oven to 200˚C.
  • Roll out pastry into a large rectangle on a lightly floured surface.
  • Mix together sugar and cinnamon. 
  • Brush pastry with beaten egg and sprinkle over cinnamon sugar.
  • Fold pastry in half to form a square and lightly roll to compress layers.
  • Slice pastry into 1cm strips.
  • Twist each strip and place onto a greased baking tray.
  • Bake for 15 minutes, then reduce temperature to 180˚C and bake for a further 10-15 minutes or until puffed up and golden.
  • Fold raspberries through whipped cream and stir through icing sugar to taste.
