Classic dolmades

These healthy vine-leaf-wrapped parcels are normally vegetarian, but add a little beef or lamb mince and you've got an instant finger-lickin' hit.

Method
  • Unravel vine leaves and place in large bowl.
  • Pour over a kettle of boiling water and allow to soak for 5 minutes. Drain and repeat.
  • Heat a glug of oil in a pan and fry onion and garlic until soft.
  • Mix remaining ingredients together and season well.
  • Place a vine leaf (vein-side up) on a board with its pointed end facing away from you.
  • Dollop a rounded tablespoonful of filling onto leaf and roll end over to enclose filling.
  • Tuck in sides and continue to roll into a parcel. Repeat with remaining ingredients.
  • Set a clean dishcloth in a shallow saucepan and tightly pack dolmades inside.
  • Pour over glug of olive oil, lemon juice and stock. Fold cloth over dolmades and cover with a plate that fits snugly into pan.
  • Simmer very gently for 1 hour. Remove from heat and allow to cool in pan.
  • Serve with a splash of olive oil and lemon juice.
