Method
  • Mix coriander, lemon peel, garlic and pepper together.
  • Stuff a small amount into each olive using your fingers.
  • Place olives and bay leaves in a sterilised glass jar.
  • Pour over lemon juice and a generous glug of olive oil.
  • Allow to marinate for at least 2 hours before serving.
  • Refrigerate for up to 2 weeks.
