Corn and cucumber salad

Wonderful with Mexican food or chopped smaller and used as a salsa over grilled fish. This salad has a great fibre content as well as a range of vitamins and minerals.

Method
  • Preheat a griddle pan over a medium heat.
  • Rub sweetcorn with olive oil.
  • Chargrill until cooked and slightly charred. Cool slightly.
  • Slice kernels off cobs.
  • Toss kernels with avocado, cucumber and coriander leaves.


Dressing

  • Mix lemon juice with 2-3 Tbsp olive oil and sugar. Season.
  • Drizzle salad with dressing and scatter over chilli flakes. Serve.


More good ideas

  • Add spiced chicken strips to salad and serve rolled in flour tortillas.
  • Dice salad ingredients into smaller bits and use as a salsa over grilled fish.
