Method
  • Place half the corn and coriander in a blender with remaining fritter ingredients (except peas)
  • Blitz until a chunky batter forms. Season.
  • Stir through remaining corn and all the peas
  • Heat 4cm oil in a pan and fry rounded teaspoonfuls of batter until golden
  • Drain on kitchen paper


Guacamole

  • Place avocado in a blender, add lime juice and blitz until smooth
  • Add tomato and remaining coriander. Season.
  • Serve fritters warm with guacamole
