Method
  • Preheat oven to 180°C.
  • Roll out pastry and cut out 2 circles the size of side plates from each sheet. Set aside.
  • Gather pastry off-cuts and refrigerate to rest before rolling out.
  • Combine filling ingredients in a bowl and season well.
  • Brush pastry with egg wash and place a quarter of filling on one half of each disc, leaving a 2cm space around the edges.
  • Top filling with a small knob of butter.
  • Fold empty half of pastry over filling and secure edges neatly on top of one another.
  • Fold and crimp edge of pastry to form a neatly braided edge.
  • Transfer pasties to a well-greased and lined baking tray.
  • Brush pasties with beaten egg and bake for 50-60 minutes or until golden brown and cooked through.
  • Cool slightly before serving.
