Couscous and roasted vegetable salad with lemon yoghurt dressing

A healthy, hearty meal in itself, perfect for vegetarians. The butternut and peppers are a great source of vitamin A.

Method

Salad

  • Preheat oven to 220C
  • Place vegetables in a roasting pan, spread out in a single layer and toss with seasoning and oil.
  • Roast for 25 - 30 minutes, or until vegetables are soft and slightly charred.
  • Place couscous in a bowl
  • Stir in boiling water and stock powder, cover immediately and allow to stand for 10 minutes.
  • Fluff couscous mixture with a fork and toss with roasted vegetables and mint.

 

Dressing

  • Mix yoghurt and vinaigrette together
  • Stir through salad to mix well
