Method
  • Preheat oven to 180°C. 
  • Mix 4 cups (600g) cake flour, 1 sachet (10g) instant yeast, 1 cup (140g) dried cranberries, 1 packet (100g) chopped walnuts and 2 tsp (10ml) salt together in a bowl. 
  • Combine 1½ cups (375ml) warm water, ½ cup (125ml) cranberry jelly and 3 Tbsp (45g) melted butter in a jug. 
  • Make a well in dry ingredients and add half the liquid. 
  • Slowly incorporate liquid into flour mixture, adding remaining liquid to form a soft dough. 
  • Turn dough out onto a lightly fl oured surface and knead until smooth and elastic.
  • Place into a greased loaf pan, cover with a damp tea towel and leave in a warm place to prove.
  • Once doubled in size, scatter over some flour and bake for 45-60 minutes or until golden and cooked through.
