Method
  • Bring a large saucepan of water to the boil. 
  • Toss in crayfish and cook for about 7-10 minutes depending on size. 
  • Remove and drain.
  • Place egg yolks in a blender and blitz, adding oil in a steady stream until they’re incorporated and mixture is thick and glossy.
  • Stir through lemon juice and seasoning. 
  • Add crushed garlic just before serving crayfish with lemon wedges and Tabasco.
