Method
  • Heat oil in a large saucepan and sauté leeks until soft, but not coloured 
  • Add milk, bay, thyme and fish 
  • Simmer for 8-10 minutes, or until fish is cooked through
  • Remove skin from fish and flake. Keep warm.  
  • Add stock and cauliflower to simmering milk and cook until tender. 
  • Blitz until smooth. 
  • Season and serve scattered with flaked fish and parsley 


Good ideas:

  • Make an even  richer version by using half milk  and half cream
  • Add a little curry powder and a dash of turmeric for  a spicy version
