Method
  • Cook pasta according to packet instructions. Drain.
  • Dry-roast walnuts in a hot pan until golden. Remove, roughly chop and set aside.
  • Heat a little oil in pan and fry leeks until soft. 
  • Add garlic and thyme and fry for another minute.
  • Pour in wine and reduce  by half.
  • Add cream and cook for 2-3 minutes. Add parmesan and walnuts.
  • Season and toss sauce through hot pasta.
