Crispy calamari rings with pepper and lime salt

The secret to really crispy calamari is to fry it when ice cold in very hot oil. For extra flair add (trickier to find) tentacles to the mix.

Method

Pepper and lime salt

  • Place salt, peppercorns and lime or lemon peel into a blender or finely grind in a mortar and pestle. Set aside.


Calamari

  • Place calamari into a bowl and cover with milk. Refrigerate for at least 1 hour, or until well chilled.
  • Heat 4cm oil in a heavy-based pan
  • Mix flour, cornflour and cayenne pepper together and season well
  • Drain handfuls of calamari and toss in flour until well coated
  • Fry calamari in batches until golden. Drain on kitchen paper.
  • Scatter over pepper and lime salt and serve with lemon or lime wedges

 

More good ideas

  • Serve with PnP fresh tartare sauce on the side
  • Use PnP marinara mix, firm white fish strips or mini chicken fillets instead of calamari
