Crispy roast chicken

"My mother used to rub her roast pork with seasoning and baking powder to make the skin crispy. I do something similar with my roast chicken," says Ina Paarman.
  • Preheat oven to 200ºC
  • Using a sharp knife, make two short slits on either side of the chicken’s backbone – these are vents to drain off the fat while roasting. Use your fingers or a wooden spoon to loosen skin over the breast and thighs.
  • Pierce holes in the skin with a sharp knife and season underneath with a little rosemary & olive seasoning
  • Spread butter over the breast 
  • Mix 1 Tbsp (15ml) of rosemary & olive seasoning with baking powder and cornflour. Rub onto the chicken skin.
  • Stuff chicken with lemon quarters and fresh rosemary or thyme
  • Tie  drumsticks together with string and tuck in wing tips. Place chicken breast down on a rack over a roasting pan, and roast for 30 minutes.
  • Turn chicken over and place onion pieces in roasting pan under rack to cook in the chicken juices. Prepare potatoes (see Ina's 'Roast spuds with cumin' recipe), place them on rack around the chicken, and roast for a further 35 minutes. 
  • Test chicken for doneness by piercing with a skewer deep into thickest part of the thigh. If juices run clear the chicken is done, otherwise give it another 15 minutes. Transfer chicken to a carving board and allow to rest, lightly tented with foil, for 10 minutes to settle the juices before carving.
  • Remove excess fat from pan juices by blotting with absorbent paper towel, or tilt pan and spoon off the fat
  •  Add 1 cup water to pan juices and bring to the boil on top of the stove. Mix brown gravy powder with 2 Tbsp (30ml) cold water and add to juices, stirring continuously. 
  • Boil for 2-3 minutes. Strain out onions if you prefer smooth gravy. 
  • Season to taste. 
  • Serve chicken with gravy, roast potatoes and seasonal vegetables of your choice
