Crème brulée has got to be one of the simplest yet rewarding desserts to make.

Method
  • Pre-heat the oven to 160ºC
  • Warm the milk, cream and vanilla essence in a saucepan
  • Mix the eggs, egg yolk and sugar in a large metal bowl
  • Once the milk is near boiling point pour it over the egg mixture, mix well and pass through a fine strainer
  • Pour the mixture into individual dishes. Place the dishes onto a tray half-filled with warm water
  • Place the tray in the oven and bake for 30-40 minutes or until set
  • Sprinkle the top of each brulée with 1 heaped teaspoon of demerara sugar and place under a grill for 2 minutes or use a blowtorch to create the caramelised brulée topping
