Method
  • Make a caramel with the white sugar in a non stick pan. Bring the sugar slowly to the boil until it all melts – you can add a little water if you wish – raise the heat and cook it until it is a rich golden brown colour. 
  • Pour it out onto a greased baking sheet or silicone mat, allow it to cool and set. Break it up into shards. 
  • In a plastic bag, crush the biscuits until fine as sand, and set aside. Do the same with the crunchie bars but break them into bigger pieces. 
  • Add a little cream to the caramel cream to give it a sauce like consistency.  On a glass plate make a bed of the crunchie crumbs (this is the sand of your beach), keep a bit back to sprinkle on top of the ice cream. 
  • Scatter the crunchie pieces on top.
  • Place eight ice cream balls on the beach and garnish with the shards of caramel and the remaining crumbs. 
  • Drizzle over some of the caramel sauce.
